Second carry before shooting was 7 steps, but no Cork player near him at this stage so made no difference. He could have solo'd three more times at that stage and would have made no difference. Can't be undone now but fair play to him for highlighting one of the most costly rule breaches, as it's impossible for a defender to stop a runner without infringing the tackle rule himself.

We all know 5 or 6 or 7steps is the norm these days. And more.

In practise, players can take 6 or 7 steps, and quite often more, with penalty.
That's the norm now.
Everyone involved in the game at a decent level operates in that basis. Including referees.

1) when a player is circled & choked of space by the opposition and is double or triple tacked.
2) when a player blatantly over carrys (9+ steps). In scoring situations the offending players layer still gets away with a lot of these.
In general, taking 6-7 steps is not pulled up.
