Heading there for the bones of a week.

I want tips, tricks, insider information, what to see, what not to see, where to eat, where to get good beer.

Get on it.
 
Forum, Colosseum etc are certainly interesting - for the latter I would pay for one of the tours.

Church of San Clemente is cool.

Some nice restaurants in the old Jewish quarter.
 
The Pantheon in Rome is probably the greatest building I've ever seen.
Its fantastic.
Don't miss it.

It is stunning.

If you are interested in seeing the Vatican, then book the tickets online before hand. Queues for tickets are mental when you get there.

Been to Pompeii and if is amazing to see. Didn't do it as a day trip from Rome though. There is a lot to see there so make sure you have enough time there.
