No additional 20 mins at the end, you leave it in the water with the lid on until the water has cooled off.

It's funny you should mention Tom Durcan.

I was in Cronins of Crosshaven around 2 years ago on a Sunday evening, just having a few pints after a day out walking by the coast. Great pub that is - family run, reliable, quirky, and a good pint it has too.

Anyway to cut a long story short, I was sitting at the bar enjoying a pint and admiring the various maritime artifacts on the wall, when a bit further up the bar, I spotted Tom Durcan having a pint of Murphys.
