If we dont produce the meat then the gap gets made up by beef produced on slash and burn grasslands that were formerly rainforest.
Climate change isnt a country issue that stops at the Irish Sea it's a global issue that needs to be treated as such. By all means we should reduce fossil fuels to zero if possible but reducing farming beef moves that beef production elsewhere with actually a higher cost to the worldwide environment as a result.
