Someone commented to me a while back that Jack Nicholson being "off" from the beginning ruins the depiction of his descent into madness, and I find myself agreeing more and more. In the book he's only a bit off, but things he's done in the past are slowly revealed and his going mad is better paced.
Dare I say it, but I think Nicholson was completely miscast in The Shining. Imagine if someone like John Ritter had played that part. Imagine seeing friendly, edgeless John Ritter descend into the realm of the supernaturally deranged. Nicholson telegraphs it.
