For D'oriel.

Pan roasted veal chops with cabernet sauce.

In a large bowl put a 1/4 cup of olive oil with a few sprigs of thyme and 1 garlic clove mushed up. Drop the veal chops in it and turn them over to coat. Stick it in the fridge overnight.

For the sauce use a nice cabernet sauvignon. DO NOT buy the cheap shit. If you wouldn't drink it then you're not going to eat it either thats my rule.

In a saucepan, put in one large shallot (chopped) and 2 cups of the cabernet and let it boil until it has reduced by at least half.

In a small saucepan melt the butter (1tbsp), add another large shallot (chopped) and whack it on a moderately high heat and keep stirring it until the onions are golden.

Stir in 2tbsp of floor and slowly mix in 2 cups of beef stock until it's all smooth and then let it boil and keep stirring until it gets thicker.

Stir the reduced wine into it and then let the whole lot simmer over a low heat. Give it an oul stir every now and again. Strain the sauce into the other saucepan and season it.

Stick the oven onto 180, fuck knows what gas mark that is. Take the veal chops out of the marinade and scrape the thyme and garlic off. Cook them on high heat for 3 minutes each side. Stick the pan in the oven for 10 minutes and turn them after 5.

Stick em on the plate and pour the sauce over them. I usually have them with mash but new potatoes are nice as well
