PARIS: FIELD REPORT


well, here it is, sandwich enthusiasts and INTERNET friends. the one we've been waiting for, after so many years, finally a pilgrimage to the home of one of the finest sandwiches known to man.

where to start? let's begin with the egg here, what a fine specimen, look at that orangey goodness. that's a happy egg, most likely from a happy chicken that has friends and probably even a name. a chicken that was proud to play a small part in sandwich perfection.

underneath we have a nice little crispy "bark" where the bechemel went under the grill, nicely defined here and without the slight bitterness you sometimes get with inferior sandwiches. speaking of which, the bechemel was a true delight, unctuous and creamy, hinting at the treasures that lay beneath.

on to the sandwich itself, not too much to report there it was all by the book. stick to the rules where the bread and ham is concerned, that's my motto, this is not the time for fancy stuff. i was surprised to learn there was no mustard down there, maybe they used it all in the salad dressing which was very mustardy indeed, providing a nice contrast to the creamy sandwich.

all in all this was a pitch-perfect rendition of an all time classic, set me up nicely for a little walk around town.
