Two weeks is a little on the short side, but if that is all the hols you can take i would go Dublin- AbuDhabi/Dubai and then on to sydney. This will give you the option of cutting down in transfer times if you go cork-london/amsterdam-singapore/hongkong- sydney.
I've flown with Singapore airlines and Cathay pacific both, being very good.
Never flown with Emirates or Etihad but I will the next time I go to OZ.

If you do go Emirates or Etihad, consider breaking up the journey and spending a day in either city. You can do that for free on the ticketing. Personally I don't know how people get off 1 7 hour flight and get straight on a 12 hour onto Oz.

Cheapest routing will be with Malaysian by the way....but that's an awful drag.

two weeks?

You'll spend two days getting there and two getting back.

I understand its for family reasons but just 2 weeks in Oz would be a dose. About 2 grand each for a return ticket to start. A full 2/3 days used up just getting there and back and then jet lag on top of that. Oz is too fucking far away. For the 2 grand it would cost to get there you could probably buy about 10-15 return flights to any major city in Europe.
