Default Cooking spiced beef

Got some in the English market on Saturday but I dont know how long to cook it for..

Any suggestions???

Cooking Traditional Butcher's Spiced Beef

Cover with cold water, bring to the boil, then lower heat and simmer gently, allowing 40 minutes to the pound and 40 over. (add Guinness or cider in the final hour of cooking).

Is this the ones with Goose Fat?

I got some for Christmas dinner, goose fat that is just to try that.

Top Tip: Save the goose fat afterwards, and smear it all over your body the next time you swim the english channel.
