FSAI report on Tony's filthy Bistro published - lot of Norries who were screaming the place was fine with egg on their faces now!

There was an excessive build up of dirt and food residue on wall and floor surfaces. This was particularly evident behind and beneath cooking equipment, beneath fridges, work benches and sinks. The ceiling of the main kitchen had a yellow colour due to the build up of grease. Grease was running down the walls behind the cooking equipment and had built up on the floor beneath. Cooking equipment had heavy deposits of grease. . The white wall cladding was stained and dirty in a number of areas. Electric sockets and the plugs and leads of equipment had a build up of dirt and residue. There are a number of surface run drainage pipes, electric cabling and water pipes and these had a build up of grease and dirt.

The lid to the chest freezer opposite the walk in coldroom was disintegrating with the insulating material exposed beneath. The paint work on the door of the walk in chill unit was blistering, the underside of the shelving corrosive deposits, and the material which had once formed the door gasket /seal to the unit was disintegrating. The casing / housing to the top of the ice machine was damaged and dirt and residue had accumulated in the gaps as a result.The internal surfaces of the cabinet fridge in the dry goods store were visibly dirty. The door seals to the bench fridge located in front of the cooking equipment were badly damaged. All of the 9 microwave ovens had heavy deposits of food residue. The internal surfaces and door frame of the blast chiller were dirty. Refrigeration equipment had a build up of dirt, grease and old food residue. The internal and external surfaces of the bench fridge opposite cooking equipment was visibly dirty and stained. Both chest freezers had a build up of ice and were visibly dirty.

The layout of the premises is not suitable. In particular a washing machine and dryer is located in a room where food is prepared and directly adjacent to an ice machine.. The Blast chiller unit has been located in the dry goods store directly adjacent to the door and facing the internal waste
area the door of which was open during the inspection.


What a dump!
