Police were called to the Sugar Lounge in the city centre shortly after 2330 GMT on Thursday, and say they do not believe the attack was random.
Wallwork is now in a stable condition and his injuries are not thought to be life-threatening.

Footballer Wallwork stabbed in club
Footballer Ronnie Wallwork is recovering in hospital after being stabbed seven times at a VIP birthday party.
Wallwork, 29, had just arrived with his girlfriend to attend the private party of 80 guests at the Sugar Lounge bar in Manchester city centre.
The knifeman approached him without warning before stabbing the former Manchester United player in the hand, stomach and back.
An eyewitness said: "Ronnie and his girlfriend had not been inside very long when this guy caught sight of him, came over and stabbed him six or seven times. Ronnie tried to fight back. There was no argument. He seemed to know Ronnie would be there. He ran out of the back door fire exit. It all happened in the space of a few seconds."
Friends and staff at the bar rushed to help the victim and calm his shocked girlfriend. Bleeding heavily, he was taken downstairs and given first aid before an ambulance arrived to take him to hospital.
Eye-witnesses said the attacker was a man known to his girlfriend. Sources said the man was a love rival.
Police confirmed the attack, which took place at 11.30pm on Thursday night, was not random.
A spokesman for Greater Manchester Police said: "We are looking for one particular person in connection with this attack and we're in the process of trying to locate him. We have spoken to several eye witnesses to the incident and we are currently examining CCTV footage. We are very hopeful the attacker will be caught shortly."
Wallwork, who played 19 league games for the Manchester club, is now recovering in Manchester Royal Infirmary.
The midfielder, a West Bromwich Albion player currently on loan at Barnsley, is on a ward and his condition is described as stable. His injuries are not life-threatening, police said.

Wallwork was enjoying a night out with his girlfriend
A 20-year-old man has been charged with attempted murder after a footballer was stabbed in Manchester city centre.
West Bromwich Albion's Ronnie Wallwork, who is currently on loan to Barnsley, was stabbed in the Sugar Lounge bar on 30 November.
The 29-year-old former Manchester United player suffered cuts to his stomach, back and hand in the attack.
Robert Rimmer, of no fixed address, is to appear at Manchester Magistrates' court later.
Wallwork had been enjoying a night out with his girlfriend when he was attacked at the bar in Deansgate Locks on Whitworth Street.
Bar staff gave the soccer star first aid before he was taken to Manchester Royal Infirmary for treatment. He was discharged from hospital over the weekend.
