I'll be going to Puerto Rico in December. I've never been away for Winter before But my friends were there last year for new years. And well they came back with some savage colour so i assume It's hot there that time of year.

Lanzarote is good also avoid late Janurary as it can be very wet.
Stay in Los Fariones Aprtments excellent

I've been looking at the same thing

Only Morrocco and The Canaries (or Egypt and Dubai if you have the budget) seem to be reliably warm.

Tunisia and The Algarve are better than most, but you wouldn't be guaranteed sun or warmth.

Southern Italy, Spain or Greece would be taking a big risk.
