I can give you some guidance on Ghent as a town if you like, but I visited as a day trip, so no nothing of accommodation there.

Bruges is beautiful, but it's very quiet.

Ghent is a big university town with a large party scene. Although it is an industrial city it has a beautiful medieval renaissance core in the area between the Gravensteen and the town centre. In addition, The Adoration of the Mystic Lamb (in St Bavo's cathedral) is the single most impressive painting I've ever seen.

I've seen that painting in the cathedral in Ghent, it's a stunner. My advice would be to stay in Antwerp, it's really buzzing, great nightlife, history galore. Ghent is only 20's away minutes by train and Bruges about 40mins. Both are well worth a visit. If you liked The Adoration of the Mystic Lamb, check out the Memling Museum @ Sint Janshospitaal in Bruges, a 14th century hospital with much of it's art still intact. The shrine to St. Ursula is breathtaking. I spent a weekend in Bruges a few years ago in the depths of winter, theer were no tourists, just a thick blanket of snow and frozen canals....beautiful.
